After harvest, a portion of perfectly healthy grapes and a maximum of maturation is dried under shelters. The grapes remain so until December hurdle, losing some of their water, which has the effect of concentrating the juices. And "dry", they are added to the young wine fermenting again while increasing density. The result? A nebbiolo whose complexity is comparable to Barolo.
