New school California Pet-Nat made from 100% Chenin. Juice is fermented in stainless steel until the sugar levels reach 15 grams. Wine is then super-cooled to halt fermentation, then bottled. As the bottles slowly warm, fermentation begins again and creates this naturally carbonated specimen worthy of celebrating. Non-certified organically farmed.
