100% Syrah. Organically farmed. Granite terroir. Manual harvest, destemmed, native yeast fermentation, with daily pumpovers for three weeks. Malolactic fermentation in barrels. Elevage: 12 months in new (1/3) and used barrels (2/3). Average production: 1,000 bottles/year.
