The goût de terroir found in Savigny lès Beaune, referred to in some circles as “scented and fugitive” will benefit with a more rustic pairing like mushroom and lamb based cassoulet or potato gratin with sausages. Lob them into a decanter however because they can show backward early on after lifting the cork. Air helps!
