Ripasso literally means "to re-pass"...in this case creating a wine that is the middle ground between spritely Valpolicella and brooding Amarone. The Valpolicella is "passed over" the skins leftover from the Amarone, essentially infusing the wine with more complexity. Ca' del Monte's version is delightfully old-world, with flavors of bing cherry, eucalyptus and smoke.
