This is 60+year old parcel of the Chasselas grape from which Deschamps produces his appellation “Pouilly-sur- Loire”. This parcel is a mix of clay on a deep base of limestone. Harvest is manual; the fermentation takes place in a mix of stainless steel and cement cuves. Only natural yeasts are used. Less than 100 cases imported to the US.
