100% Grillo. From organically farmed, hand-harvested vines on a flat, sandy site in the contrada of Bastonaca in the DOC of Vittoria. Fermentation takes place with indigenous yeasts in large concrete and steel tanks. Starting in 2017, Grillo could no longer be named on an IGT label, so it is called simply "Bianco".
