This wine is racy, vivid, and excellent with all kinds of seafood dishes. Vines are planted in limestone and chalk at high elevation and grapes are hand-harvested. The wine is fermented and matured entirely in stainless steel and does not undergo malolactic fermentation. Use it like you might use a Sauvignon Blanc!
