Catalyst pays homage to French biere de miel, or honey beer. This barrel-fermented saison uses wildflower honey sourced from hives on the property. It's then aged for 8 months and bottle conditioned. It’s a bright and complex beer, with tart lemon, sweet orange peel, wet straw and oak. It has a very dry finish, reminiscent of white wine.
