Inspired by the dusty, hay-filled stone barns of the Nord de France that gave way to the rise of Bière de Garde, they included a small portion of hay in the mash. Then they allowed Reposé to rest in brandy barrels for almost a year. The time in barrel gives balance with sweet bready baked malts, chesnut & maple with dried hay, lemon peel and tart blackberry.
