From Brack Mountain winemaker Daniel Fitzgerald, the Fable Cabernet is sourced from northern California vineyards, including sites in Mendocino and Lake County. De-stemmed and given a long cold soak, the wine then fermented on indigenous yeast in stainless steel, then pressed after 21 days in tank. Indigenous malolactic fermentation. Aged in 30% new French oak barrels.
