L'Hermitiére is a sparkling Norman cider that in my mind sits roughly halfway between the greats of Clos Normand and Etienne DuPont on a few dimensions. Cidre Brut is lively and complex, with the delicate aroma of ripe apples, leather, and freshly mown hay. These ciders can be enjoyed for years while gaining complexity as they age.
