Whole cluster fermentation in large oak vats. 30-day maceration followed by one year of aging in 1500-liter foudre and 500-liter neutral barrels. Bottled without fining or filtration. This wine is light and fresh with vegetal characteristics. Drinks more like a Burgundian Pinot Noir then a dense Mencia.
