Although the Danes have a proud tradition of making cherry liqueurs, the production has all but disappeared. Unlike traditional liqueurs, the Stevnsbær cherries are allowed to ferment after the picking which creates intense flavor and complexity. The liquer is then aged in used Cognac barrels for at least 6 months before bottling. One of the best cherry liquers in the world.
