The Roswell series aims to explore the outer limits of coolship spontaneous fermentation. It is made once a year during the late spring from Lambic-inspired wort that was brewed the prior fall. Intense amounts of blackberries add otherworldly vibrant fruit flavor and aroma that stands up to and melds with the funk and complexity of the base.
