Back in 1890, Francisco Alfredo Pellas built a sugarcane plantation and a rum distillery on the side of an active volcano, knowing that the rich volcanic soil would enhance his rum. This rum is aged an average of 12 years in charred oak casks, yielding a spirit that is wonderful neat or on ice, and also affordable enough to use in cocktails.
