From a selection of the brightest Chardonnay clones on the Estate, separately direct pressed or macerated and then barrel fermented using native yeast in 25% new French oak, the wine is then left to age on the lees for 19 months to develop natural complexity and terroir characteristics as it undergoes natural malolactic fermentation. Bottled with fine lees for added richness.
