This side project was started by Géraud after several incredibly small harvests in the Jura. He sources organic grapes from his friends in other regions and vinifies them into playful wines. This cuvée is made from Jacquère grown in Savoie on yellow marls. The grapes were whole cluster pressed into concrete egg for fermentation and a ten-month élevage.

This is a red wine made by monks in an 11th-century monastery just south of the Bremmer Pass. Lagrein, a variety that yields wines of surprising depth and elegance, is a cool-climate cousin of Syrah that is indigenous to the Alto Adige.
