Cubillo is the youngest López de Heredia wine in the stable, referring to the vineyard of the same name. The average vine age is 40 years. Though it is always the most recent vintage of all their wines, it sees two years in used American oak barrels and another two in bottle prior to release, making it nearly old enough to be classified as a Gran Reserva.

This vintage of a highly sought after producer in the Northern Rhone grants complex notes of black tea, black raspberries and soft textures, resulting in a harmonious and full style of syrah. Jean-François Ganevat—known as Fanfan—makes wine with the inspired magic of an alchemist. This is a blend of 3 bourbon mash bills comprised of four grains (Corn, Wheat, Rye, and Malted Barley). Each Toasted Series expression is comprised of a different char / toast to give each version its own character; this one has a char level of 2 and heavy toast and bourbons used are aged 3-5 years.
