These grapes are hand picked and fermented in stainless steel. The proximity of the vineyard to the mountains is very close and this aspect provides a cool growing environment. This ensures a very crisp and mineral driven wine. This chardonnay is not a wine that is buttery or oaky. There is some creaminess due to the fact that wine sat on the fine lees for six months.

Hidden Block stands apart in many ways, not least of which in its geography, aspect, and clonal difference. The nose is generous with aromas of black cherry, cola nut, and a touch of mint. On the palate, it is fuller bodied than the other pinot blocks, expressing ripe cherry, sandalwood, and spice. The tannins are present and fine grained while the bright acidity lifts the palate.

Aligote: Burgundy’s other white grape. Citrus-driven, saline & lighter-bodied than chardonnay, it is fermented & aged in tank without oak. Planted in 1953, this parcel of old vines is located in the commune of Saint-Bris & grown on crumbly, chalky soil. Beautifully aromatic and mineral, with a streak of classic Piuze acidity. Aromas of freshly-cut green apple, Asian pear, white flowers, and wet stone.
