Straw-yellow in colour with greenish tinges, this wine is marvellously floral on the nose, with distinct fruity nuances of apple and white peach also present. Fresh, clean flavour, with a perfect balance between the acidulous and sugary elements. Persistent on the palate with a soft, mouthfilling perlage.

The aromas and flavors are filled with juicy pineapple, perfumed florals and white peach notes. Partial barrel fermentation and aging in new oak exhibits hints of a creaminess, calling to mind fresh brioche, braided with nutmeg and toastiness. From Brack Mountain winemaker Daniel Fitzgerald, the Fable Pinot Noir is grown from benchland sites in Mendocino. Two thirds of the fruit was fermented de-stemmed in open-top fermenters, layered over the remaining third in the tank, which was left whole cluster. After a 5 day cool soak, the wine fermented on indigenous yeast, finishing afterward with an indigenous malolactic.

A perfumed, violet-scented, floral bouquet is generous and alluring. The palate is intense with a strong core of red fruit, moderate tannins, and fresh, energetic acidity. The all-important finish is long and expansive foretelling a great evolution in the bottle.

The Uprising, a new wine aged for 30 days in Rum Barrels, pays homage to Australia’s Rum Rebellion of 1808. Due to the Government's hindering of the rum trade, citizens and soldiers banded together to overthrow them. We aged a portion of this wine in Rum barrels lending a warm brown sugar finish to this dark jammy wine.

From 35-40 year old Pinot Noir vines on the steep hillsides in front of the Boulay home in Chavignol. Gerard works the soil manually and lets nature make the wine. Boulay adds no yeast and minimal amounts of SO2. Unlike many Sancerre Roses, Gerard harvests his Pinot specifically to make rose by direct press, then into tank.

Deriving from several parcels sporting a mix of Kimmeridgien & Oxfordian soils, the grapes are fermented in whole bunches with native yeast. Deeply delicious & fresh & a classic!

Made from organically farmed Grenache from a single vineyard, there are only a couple hundred cases of Manarine’s 2015 “Pied de Boud” on the planet. The wine leads with deep and mouth-filling black raspberry, dark cherry, and mulberry fruit. Behind the plush, dark fruit there are layers of berry liqueur, Mediterranean spices, sweet licorice and blue flowers.
