Lychee, citrus blossom, apricot, fresh flowers and hints of mint all give way nice round profile and a beautiful freshness. Nice minerality too. The estate was built close to a natural spring where wolves from the Mont Ventoux went to drink. This is the origin of the estate’s name: The fountain of the wolves.

The base beer is a Pilsner aged in Sauvignon Blanc barrels with the addition of Sauvignon Blanc grape juice for a secondary fermentation. The juice and barrels are from Dutton Vineyards in the Russian River wine appellation here in Sonoma County. There is no lactobacillus or pediococcus added to the beer, only brettanomyces. The tart acidity comes from the wine grapes.

Dexter Small Batch Wheat is rested in American Oak barrels then WoodCraft finished using 200 year oak and cherry wood. Woody and stately on the nose with hints of cedar, thyme, prune, and maple. Rich and elegant mouthfeel, with hints of mace, orange liqueur, and strawberries in cream before finishing strong with touches of caramel and apricot.

This solid example of classically rich California Chardonnay will please adherents to that style. Aromas of toasted hazelnut, oak and lemon syrup lead into a palate of marzipan, caramel apple and crème brûlée flavors.

Ripe, crunchy fruit, red current, super fresh, supple tannins. Cinciorosso is made from the young vines, which are rarely under 10 years old, so not really that young. It is a generous wine that uses Merlot and Syrah to soften the Sangiovese tannins

Chardonnay is a rarity in Abruzzo and these are some of the oldest Chard vines in Italy, brought back from France by current-generation Eloisa De Fermo's great-uncle and planted in 1926. Aged for 9-12 months in tonneaux. Stuns with a bouquet of crushed almonds, pear skins, brioche, and pretty florals. Silky in texture, it’s nicely balanced by brisk acids and spiced citrus.
