Tequila Proximus is smooth not just for the sake of being smooth, we carefully distilled Proximus to eliminate the harsh alcohols that actually close the taste buds. By keeping the palate open people can taste the subtleties of agave and its natural sweetness.

Dominique Ay, the serious-minded proprietor of Domaine Raspail-Ay, makes one of the most iconic wines in all of Gigondas. Its 19 hectares make up one contiguous block of vines, mid-slope on the rugged clay/limestone terraces, the best terroir of the Gigondas appellation. Saignée method, aged in concrete until bottled. This is very limited.

Fizzy and fun, this pear cider was envisioned to mimic the semi-sweet citrus delight known as Vinho Vearde. Effervescent and wonderfully inviting, this cider was actually fermented at cold temperatures (lagered) to showcase honeyed aromas and clean flavors of ripe stone fruit. Easy drinking doesn't have to be complicated.

The rustic edge of heirloom apples mingle with zesty traits of lime and spruce from the addition of Amarillo and Nelson Sauvin hops. This cider also spends nearly half a year aging in oak and truly sets itself apart from other hopped up apple concoctions given that it actually holds a bitterness- one that works well with the natural tannic nature of the cider.

The color is light straw, and the aromas are clean with dominant notes of honeysuckle and Golden Delicious apple. Hints of spice comes through on the nose. On the palate, the wine is elegant with clean, refreshing flavors of citrus, melon, and peach. the finish is creamy in the mouth, with and integrated oak.

At first a little grassier than last year, certainly more high-strung, lithe and brisk, but still entirely to form and with a high register of strawberry; there’s a crescendo of chalky solidity—the finish is the strongest element here, indicating it only needs time on the cork to settle into its depth. —Terry Theise
